Cauliflower Soup

I have a great recipe for you!  It is so easy, quick, and tastes amazing!  It is creamy without any dairy.  That, in my book, is the best thing ever.  I have always been a cauliflower lover. I grew up eating cauliflower on the regular.  I feel cauliflower was such an underrated vegetable, until just a few years ago.  I am so happy this wonderful veggie is getting the props that it deserves!

So onto this yummy and quick recipe.

Cauliflower Soup

Serves 4-6 people
1 tablespoon olive oil
1 small onion, chopped
1 head cauliflower, chopped
3 cloves garlic, minced
32 oz vegetable stock

Heat oil in a stockpot on medium. Once heated, add onions and sauté for 5 mins.
Then add cauliflower and sauté for an additional 10 minutes. Next, add garlic and saute for another 30 seconds. Finally, add vegetable stock.
Bring veggies to boil.
Once boiling, cover and let simmer for 25 minutes.
After veggies are finished simmering, blend in blender until creamy and smooth.

Serve and enjoy!
