Shaved Brussel Sprout Salad

Combining shaved brussel sprouts with lemon and olive oil makes such a delicious dressing for this salad.    Yet it is very simple, it is very delicious and tasty.  This salad is simple to make for a quick side salad or you can throw in grilled shrimp for a complete entree.

3/4 lb shaved brussel sprouts (read the note below if you don’t have shaved brussel sprouts)
1 1/2 cups shaved almonds
1/2 cup shaved parmesan cheese
1 lemon juiced
3 tablespoons olive oil
Salt and pepper

Combine shaved brussel sprouts, almonds, parmesan cheese in a large bowl.  Combine squeezed lemon and olive oil in a small bowl.  Whisk until combined and then add to salad.  Salt and pepper to taste.


Note:  If you are unable to find shaved brussel sprouts at the grocery store, you can shave the brussel sprouts in food processer with a slicer blade attachment.  First, wash the brussel sprouts, trim the ends off, and then slice in the food processor.
