InstaPot Mexican Stuffed Sweet Potatoes

Sweet potatoes are so healthy and delicious to eat.  It is always hard for me to resist a sweet potato.  They are such a versatile vegetable that can be made into a savory, spicy, or sweet dish.  Sweet potatoes have so many health benefits.

  • It contains the daily vitamin C daily requirements
  • Helps combat free-radicals in the body which benefit our skin
  • Contains a slow release of carbohydrates
  • High in fiber
  • High in potassium
  • High in manganese

Sweet potatoes are the easiest, quickest and tastiest dinner to come together during a busy evening.  I make Instapot sweet potatoes on the regular and there are never any leftovers!

 

Recipe

Potatoes

  • 4 medium sweet potatoes
  • 1 cup water

Toppings 

  • Ground Turkey (recipe below)
  • Black beans and Corn Mixture
  • Cheddar Cheese
  • Sour Cream
  • Avocado
  • Green onion
  • Salsa

Instructions for the Potatoes

Scrub the potato skin well with water.  Place 1 cup water in the Instant Pot.  Place the potatoes in the steamer basket and secure the lid.  Turn the valve on seal.

Use the manual mode of the Instapot and set the pressure cook timer on high for 15 minutes.

Once finished cooking, let the Instapot pressure valve naturally release.  Once the pressure is released (about 10-15 minutes), the potatoes are ready to be served!

Instructions for Ground Turkey

While the sweet potatoes are cooking, start making the ground turkey.

  • 1 pound ground turkey
  • 1 cup chopped white or yellow onion
  • 3 garlic cloves, finely minced
  • 1 tablespoon chili powder
  • 3 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1/2 teaspoon salt
  • 1/4 to 1/2 teaspoon black pepper
  • 8-ounce can tomato sauce
  • 1 jalapeño, seeded and minced

In a large skillet over medium heat, add the ground turkey, onion, salt and pepper. Stir often and make sure the break meat into small pieces.  Cook for 5 minutes.

Add garlic, chili powder, cumin, coriander, salt and pepper.  Cook for an additional 30 seconds.

Finally, add the tomato sauce and chopped jalapeno.  Cook ground turkey for an additional 8-10 minutes.  Season with salt and pepper.

Instructions for Black Beans and Corn Mixture

  • 1 can black beans
  • 1 cup corn
  • 2 teaspoon cumin
  • 1 teaspoon oregano
  • dash cayenne
  • salt and pepper

Drain the black beans in a colander and rinse water.  Combine drained beans in corn in a pot over medium-low heat.  Add cumin, oregano, cayenne, salt and pepper.  Cook for 5 minutes or until well heated.

Once everything is cooked and heated through (sweet potatoes, ground turkey, black beans and corn), slice the sweet potatoes lengthwise and add all the toppings you desire!
