Citrus Avocado Mint Salad

The best time to eat citrus fruits is definitely in the winter.  The oranges are always bursting with juicy sweetness.  This winter salad will make your tastebuds so happy with all the variety of flavors.  The juicy citrus, the creamy avocado, and the refreshing mint all combine so well together and taste amazing.  This dish can be made several hours ahead since the oranges keep the avocado from browning.

Oranges have a high amount of vitamin C which is so beneficial in the winter months when we are fighting off colds.  Vitamin C helps fight off free radicals which can cause damage to our cells.  Just one orange contains 130% of our daily value of vitamin C.   Oranges are refreshing and just delicious!!

Well now onto the recipe!

Ingredients

2.5 lbs variety of oranges (mandarin, cara cara, blood, naval, etc)
1 avocado, peeled, pitted, and diced
1/3 cup olive oil
2 tablespoons champagne vinegar or white wine vinegar
1 tablespoon honey
1/4 cup mint leaves, chopped
salt and pepper

Instructions

Peel and dice the oranges.  Arrange oranges with avocado on a plate or in a bowl.

In a small bowl whisk olive oil, vinegar, and honey together.

Pour dressing over citrus salad.  Top with mint leaves.  Season with salt and pepper.
